    College students struggle to eat healthy. It can be even harder on a vegan diet.

    Madeline Heising learned this her freshman year at Northeastern University in Boston, Massachusetts. Though she had been a vegetarian since she was 10 years old, adjusting to the fast-paced lifestyle and budget constraints of college made it difficult to maintain a healthy diet.

    To combat the “freshman 15,” Heising and a friend decided to break the habit after the year ended. After discovering a weeklong vegan challenge, she started cooking simple plant-based dishes in her apartment’s tiny kitchen.
